Cag kebab is a traditional kebab prepared with lamb or kid meat. It is associated with the Aksu Kapı area of Tortum in Erzurum and is cooked on a horizontal skewer over a wood fire.
The meat is seasoned with onion, basil, salt, and black pepper, then rested for a richer flavor. It is slowly roasted above glowing embers and sliced into portions before a final finish on the skewer.
It is served with onion, tomato, green pepper, and traditional bread or lavash.
